| | | Vegan Blueberry Oat Bars | Whether you're looking for an afternoon snack or a yummy breakfast, these blueberry bars from Laura Theodore's Vegan-Ease are a sweet treat perfect for any time of the day. We love the nutritional benefits of the rolled oats, flax seeds, and fresh fruit … and the fact that these bars are as easy to make as they are easy on the eyes. Now go make them, and enjoy this crunchy-sweet delight! | | Makes 10 bars | What You Need:
1/4 cup golden flaxseeds 2 large ripe bananas 1/4 cup sugar 2 heaping tablespoons blueberry preserves 1 teaspoon vanilla 2 cups rolled oats 1/4 cup unsweetened shredded dried coconut 1 cup fresh blueberries | | What You Do:
1. Preheat oven to 375 degrees. Line an 8-inch square baking pan with unbleached parchment paper, leaving 3- to 4-inch "wings" on sides of pan.
2. Into a blender or food processor, place flax seeds and process into a very fine flour. Into a medium-sized bowl, place bananas, sugar, blueberry preserves, and vanilla, and mash into a chunky purée. Add ground flax seeds, oats, and coconut, and stir to combine. Gently fold in fresh blueberries.
3. In prepared pan, spread dough in an even layer. Score into 10 bars using a knife. Bake for 30 to 35 minutes, or until lightly golden around the edges. Place pan on a heatproof surface, and carefully lift bars out of pan in one piece. Transfer to a wire rack and let cool for 15 to 20 minutes.
4. Transfer bars to a cutting board and cut into 10 individual bars.
