Vegan Apple-Fennel Salad + More Recipes!

We’re keeping things fresh this week here at the VegNews Recipe Club with this Apple-Fennel Salad. Apples, red onions, fennel, and arugula bring incredible seasonal flavors while packing quite the nutrient punch. A tangy dressing made of oranges (juice and zest!), poppy seeds, and flaxseed oil falls over the leaves of arugula and other produce. The best part? Edible flowers! This salad is topped with Nasturtium blossoms. We can’t get enough of this raw salad, a definite go-to for wowing guests at dinner parties. But to be completely honest, we’re happiest when we get it all to ourselves.
